> Creamy Maple Rice Pudding
An excellent way to use leftover rice
1/2 cup raw rice
1 qt. milk
1/2 cup maple syrup
1 egg, beaten
1 tbsp cornstarch
1 tsp vanilla
Precook rice, add to milk and maple syrup. Cook in a double boiler for 1 hour, stirring occasionally. While stirring, slowly add egg to rice mixture. Mix cornstarch with a little milk.
Add to rice, stir and cook until creamy, about a half hour. Add vanilla and raisins.
Pour into 6-8 serving dishes.
